It's a food most Americans eat virtually every day: at the dinner table; in the cafeteria; on the barbecue patio; with mustard at a ballpark; or, a billion times a year, with special sauce, lettuce, cheese, pickles, onions on a sesame-seed bun. Beef is, the TV commercials say, " America's food" --the Stars and Stripes served up medium rare..."
THERESA: I've never tried vegetarianism, though I have cut back on my meat consumption in recent years. I don't think meat is inherently unhealthy, but I have some concerns about the meat processing industry and with e coli concerns and all, I do avoid ground beef. I eat chicken, turkey, lean pork, and even a steak once in awhile. It is important to get enough protein, and adding some meat to a salad or rice dish helps with that.
DIANE: Each body is biochemically different. My thought is that if a food makes you feel sluggish or bloated, chances are your system doesn’t like it. So why eat it? Every body is different and should eat the foods that make it feel energized and satisfied. I have concerns about the meat industry and the production of meat products though, so I only eat organic lean meats, mostly chicken, turkey and lean beef.
I used to be vegetarian, and maintained a very healthy lifestyle for 15 years (starting when I was 14). I started because my asthma was so bad and I didn't want to put growth hormones or excessive antibiotics from the meat into my body. (that was when 'organic' meats were hard to come by) My cholesterol levels were amazing. By being a vegetarian I paid much more attention to WHAT I put into my body than my meat eating friends. However, everything was shot to heck when I developed Ulcerative Colitis last summer. The only vegetable I can eat raw is lettuce. All other vegetables must be grossly overcooked. I can't eat soy, I have a hard time with legumes. So I started to eat organic poultry in December. I wish I could remain vegetarian, I was a happy, healthy vegetarian. My GI tract will not allow it anymore!
Posted by: meg on June 29, 2004 11:45 AMI was a lacto-ovo vegetarian for about 12 years (meaning I ate dairy products and eggs, but no red meat, chicken or fish). I have returned to eating fish and chicken but cannot handle red meat - tastes too bloody. This was back in the '70s.
I had fewer digestive problems as a vegetarian. Generally, one has a "lighter" feeling not eating meat, but otherwise, I have no dramatic tales to offer. Certainly it is harder to find food in restaurants if you're a vegetarian, though not so much these days.
Now I usually have meat once a day, either at lunch or dinner. But I make sure to get protein in grains, nuts, dairy (but not much high-fat cheese).
It's my experience - annecdotal, I admit - that you can make do with a lot less animal protein in your diet than is generally recommended.

I eat virtually no processed lunch meat because it's just a chemical glob and I avoid hot dogs most of the time for the same reason. I rarely eat hamburgers, because I indoctrinated myself into believing they were poison many years ago when I radically altered my eating habits after years of fast food burgers. But an occasional steak is a terrific treat. Once again, I believe in moderation. You don't have to undertake a radical diet, like being a vegetarian, just limit your meat to an occasional meal.

(I do love turkey, though, so I guess I'm not sure how to define my diet.) But I do find that when I eat red meat, I feel less energetic. The taste really doesn't do anything for me either.
If you eat fish, you're not a vegetarian - even a liberal one! But you're right about your diet being hard to label.
Posted by: Laurie on June 29, 2004 12:28 PMI find I follow a Mediterranean type diet when left to my own devices. I cook more meat than I personally eat for my family though. The Mediterranean diet is heavy on rice, pasta, beans and legumes with fresh fruits and vegetables and much more fish than poultry and very little red meat.
It feels right for me and I try to eat brown rice and wheat free pastas to keep the carbs in the unrefined category.

I was a vegetarian for almost 13 years but over the past year or so I started to each fish and very recently I added chicken to my diet. I adopted this into my diet because I am following a high protein low carb diet (which I know not everyone agrees with) but I however am losing weight and feeling more energized than before. I agree with Jill that I stay full longer too. I also agree with moderation as well. I try to limit the bad fats some that are associated with the low carb plan and try to eat things like alvacado and lower fat cheeses. I still have a ways to go but it seems to be working right now!

This stuff is a real eye opener.
This time of year, I really miss hamburgers and hotdogs. But all I have to do is remind myself of what goes into these products, and I'll reach for baked beans and the salad. The worst part about consuming red meat, in my opinion, is that you're also ingesting bovine growth hormones and other potentially harmful things that go into livestock.
